- Comments: A follow-up inspection was carried out today to ensure that the bain marie taken out of service on 3/26/2024 is holding proper cold holding temperatures after repairs. The bain marie was found to be holding temperature to approved cold holding temperatures. The facility is to send a new work order for the dish machine with the temperature noted by the technician at the time of repairs. The dish machine is to remain out of service until the work order has been sent to EHS contact provided and MCOPH has given facility permission to place it back into service.

- Comments: The bain marie at the second cook’s line was observed not holding proper cold holding temperatures. Food internal temperatures measured from 46F-50F. All food prepped at opening (less than 2 hours from prep) moved into other cold holding units. All TCS foods not prepped at opening voluntarily discarded including marinated vegetables. Facility voluntarily took unit out of service. Facility may not use the unit until serviced by licensed professional, AND unit is operating at 41F or below, AND written permission is granted by MCOPH. Failure to comply or await permission before using unit may lead to legal action. - Fifteen containers of beef stew were found to be past the expiration date in a two-door glass refrigerator in the dry storage area. The facility chose to throw them away. They also need to establish procedures and keep records for a 24-hour public health control.
- The facility was found with a squeeze bottle of melted butter and egg appetizers being kept at room temperature without time logs. They need to appropriately identify, store, and use toxic substances.
- Cans of butane were discovered stored on shelving among food in the dry storage area. The facility moved them voluntarily during the inspection, and they need to keep insects, rodents, and animals out of the facility.
- Rodent-like droppings were seen in the back of the dry storage area under the shelving. The facility needs to clean and sanitize the area immediately and seek professional pest control. They also need to prevent contamination during food preparation, storage, and display.
- Uncovered food was found throughout the facility in cold holding and dry storage. The facility covered the food voluntarily during the inspection, and they need to properly store in-use utensils.
- Knives were found stored in the crevice between the bain marie unit and the prep table. The facility moved them to a 3-basin sink for sanitization, and they need to ensure that food and non-food contact surfaces are cleanable and properly designed.
- Absorbent materials were observed lining surfaces throughout the facility. The facility removed them voluntarily, and they need to ensure that food and non-food contact surfaces are cleanable and properly designed.
- Shipping film was found on equipment at the back of the kitchen. The facility needs to ensure that non-food contact surfaces are clean.
- There was a general accumulation of debris around and under equipment at the cook’s lines. The facility needs to ensure that non-food contact surfaces are clean.
- Liquid was observed draining directly onto the floor from an unused noodle machine. The facility closed off the line to the unused equipment, stopping the flow of liquid. They need to ensure that physical facilities are installed, maintained, and clean.
- Former kid’s playroom was observed with peeling wallpaper exposing unfinished surfaces. They need to repair it to ensure a smooth, non-porous, and easily cleanable surface.
